Velona’s Jungle – Florence, Italy
Velona’s Jungle is a family-run Florence hotel, made up of four luxury suites.
This place has a bohemian vibe with its tropical wallpapers, colourful cushions and the occasional leopard-print seat covering.
The boutique hotel is also filled with objects d’art collected by the family’s patriarch, a respected art dealer. Set yourself up for a day of exploring with a sweet or savoury vegan breakfast.
The Stanfords – Mendocino Bay, California
The Stanfords have been innkeepers at their eco-resort on the Mendocino Bay in northern California since 1980.
A large organic garden acts as the focal point of the property and the main source of produce for the Ravens Restaurant.
The rooms are timber-clad, giving the feel of a cabin by the water.
The property has a pool, and offers yoga and tai chi lessons as well as nature and canoe tours.
Casa Albets – Catalonia, Spain
After being passed down for generations, the Casa Albets, a traditional rural house 75 miles north west of Barcelona, has been renovated into a hotel and restaurant by Megan Albets and her husband Joel.
The spacious rooms feature exposed stone walls, furniture built using oak from the estate, and hand-made mattresses and cushions filled with eco-friendly materials.
The restaurant serves healthy food using mainly organic ingredients, with more and more being grown in their own 30 hectares of fields.
