Ross Edgley’s Dark Chocolate and Berry Protein Loaf

This “Dark Chocolate & Berry Protein Loaf” is so easy to make and is perfect for after the gym. Light and moist, the dark chocolate and strawberries perfectly complement the soft sponge-like loaf base. Plus, as with all my recipes, it’s loaded with healthy, functional ingredients from the flavanoid content of the dark chocolate to the vitamin C content of the strawberries. Essentially it’s a very nutrient-dense, high protein dessert.
Ingredients:
– 30g Whey Protein (vanilla flavour works really well as does dark chocolate, although feel free to experiment with others)
– 2 whole eggs
– 50g dark chocolate (ideally 85% cocoa since far healthier)
– 30g coconut flour
– 200ml almond milk
– 50g of strawberries
– Baking powder (1/2 a teaspoon)
Method:
1. Mix ingredients into a bowl (whey, eggs, coconut flour, oats, almond milk and ½ a tsp of baking powder)
2. Whisk until mixture light and almost frothy
3. Add more almond milk to achieve the right consistency
4. Then add a conservative amount of dark chocolate and berries into the mixture
5. Line loaf tin with greaseproof paper or coconut oil
6. Pour in the mixture
7. Pre-heat oven to 250C
8. Place the loaf tin into oven and cook for 40-60 minutes (if you have a good oven it may be shorter so be sure to pay attention to your loaf whilst cooking and use a toothpick or knife to check as it’s baking)
9. Remove and enjoy

– 43g Carbohydrates
Serving suggestions:
Also goes very well with natural yoghurt. Especially if you find the texture too dry, this balances it out perfectly.
A little science to finish:
Some people are concerned about eating too many carbohydrates – but the truth is that immediately after training your body will thank you for the additional carbohydrates and you won’t store them as fat. This is because your muscles are depleted and your insulin sensitivity (how we absorb and use carbohydrates) is elevated so anything we eat is absorbed like a sponge by the muscles.
Basically if you’ve trained hard, go home, eat and enjoy this completely guilt-free. Your body will actually thank you for it.
